Rome, the Eternal City, like all other parts of Italy, has a unique cuisine which is distinctly its own. From the butcher shops of Testaccio to the glorious fresh produce found in the market in Campo di Fiori, Rome’s cuisine is defined by the variety of its neighborhoods. Always drawing from the best seasonal ingredients and including influences that go back to the days of the ancient city, Roman cooking is vibrant, flavorful and remarkably simple.

In this class, we will explore some of the treasured classics of Roman cooking beginning with a fennel and orange salad as well as a traditional dish of artichokes roasted alongside garlic-infused potatoes. We’ll continue our feast with savory monkfish braised with peppers, capers and fresh herbs and a true, yet rarely made, classic Roman gnocchi. And no Roman menu would be complete without pasta all’amatriciana, pasta with a smoky bacon and tomato sauce. We’ll end our meal with a light but wonderfully satisfying almond cake.

Finally, we’ll gather around the table to enjoy our culinary creations while a resident wine expert leads us through a flight of perfect pairings.
